BIOL-2300 NUTRITIONAL BIOCHEMISTRY AND FOUNDATIONS

In this course, students will explore the foundations of nutrition, digestion, and absorption, including the biochemistry of macro and micronutrients and the roles they play in human function, health, and disease. Students will also learn the cyclical way in which disease both impacts nutrient status as well as how nutrient status impacts disease risk by learning skills regarding the evaluation of nutrient status and eating patterns in order to suggest improvements in diet and lifestyle for the individual. On the national level, students will explore the roles that culture, society, policy, and economy play in nutrition and public health and health promotion.
